Her name is Carey, revealed in the second volume of The Art of Rick and Morty to be named and designed after episode director Jacob Hair's fiancée (later wife) Carey Armellino. She was the third official girlfriend of Morty. As she was in another dimension, she clearly has a counterpart in Morty's home dimension.
