Using malt purchased from a supplier, J.P. Wiser's cooks, ferments, distills and ages all grains - corn, rye, barley and wheat - separately in a variety of casks, including virgin oak or once-used American Bourbon casks, used wine casks or multiple-used Canadian whisky casks.

Rye is naturally spicier than other grains such as corn and wheat, resulting in a spicy kick to the whiskey, often described as having a black pepper or clove-like taste. Some of the earliest rye whiskeys in America were created from a mash of 100% rye. This whiskey was extremely spicy and dry.

J.P. Wiser's is Canada's oldest continuously produced whiskey, dating back to 1857. Its award-winning traditional Canadian rye whiskeys use a selection of superior grains from the Great Lakes region, but J.P. Wiser's key legacy was to age his whiskey longer than others at the time.

What makes whiskey a rye? In the United States, legally a rye whiskey has to have at least 51 percent of rye grain in its mash bill. The other grains are usually a combination of corn and malted barley, but can include others as well. And in the U.S., it must be aged in new charred oak containers.

For a U.S. whiskey to be considered rye whiskey, it must be made with at least 51% rye, a wheat-like grass used to make some beers and vodkas. Otherwise, the ingredients list and distilling processes are nearly identical to those used for bourbon.

Rye is all about rich spice, power, structure and a distinctively bitter finish. These attributes can make it challenging to taste when young, but with time they mellow into new levels of complexity.

According to the United States government, rye whiskey sold in the United States must meet these requirements: Made from a grain mixture that is at least 51% rye. Aged in new charred-oak barrels. Distilled to no more than 160 proof, or 80% alcohol by volume (ABV).

This green label J.P. Wiser's Rye is a replacement for a whisky released a few years ago under the same name. And it has changed. The distillery started by raising the rye content to 62% blending it with wheat and corn.

There are several companies producing whisky in Japan, but the two best-known and most widely available are Suntory and Nikka. Both of these produce blended as well as single malt whiskies and blended malt whiskies, with their main blended whiskies being Suntory kakubin (角瓶, square bottle), and Black Nikka Clear.
