The company was founded in 1986 by Zohar Norman and Yehuda Pearl as Sabra-Blue & White Foods. The company was bought in 2005 by Israeli food manufacturer Strauss. Prior to the acquisition by Strauss, Sabra had entered into negotiations to purchase Basha hummus, which was then the leading hummus brand in Detroit.

Since our humbling beginnings in Astoria Queens, NY, the Sabra Dipping Company has grown to become the leader in refrigerated dips - not to mention the maker of America's top-selling hummus - now with headquarters in White Plains, NY, a Gold LEED-certified factory in Richmond, VA, and a factory in Oceanside, CA.

The word hummus comes from Arabic ḥummuṣ (“chickpea”), an abbreviation of the dish's full name ḥummuṣ bi-taḥīnah (“chickpea with tahini”). The word is stylized in myriad ways, depending on the language: as houmos, humus, hommus, or hommos.

Concept and creation. Belinda Glass, a singer and the first wife of Marvel writer Mark Gruenwald, came up with the name and concept of the character. "Sabra" is a slang term for a native-born Israeli Jew. The name refers to the prickly pear cactus tough on the outside but soft and sweet on the inside.

Sabra, co-owned as a joint venture between Strauss Group and PepsiCo, has struggled with salmonella and listeria contamination that led to recalls going back to 2015. In December 2021, the brand received a warning letter from the FDA highlighting several violations at its Virginia plant that makes hummus.

Hummus is a smooth and creamy puree of cooked chickpeas (garbanzo beans), tahini sesame paste and an acid, typically lemon juice. While hummus usually has garlic now, centuries ago it did not. Olive oil isn't a requirement either, but most modern recipes list it as an ingredient.

Nearly half of all Israeli Jews are descended from immigrants from the European Jewish diaspora. Approximately the same number are descended from immigrants from Arab countries, Iran, Turkey and Central Asia. Over 200,000 are of Ethiopian and Indian-Jewish descent.

Created by writer Bill Mantlo and artist Sal Buscema, the character first appeared in Incredible Hulk #250 (August 1980) in a cameo, before making a full appearance in Incredible Hulk #256 (February 1981). Sabra is the alter ego of the Israeli superheroine Ruth Bat-Seraph (Hebrew: רות בת-שרף).
