Hardly the gorgeous meal we're used to seeing dressed up in cookbooks. So why do these crustraceans turn red when they're cooked? Lobsters and crabs have a pigment called astaxanthin in their shells, which has the ability to absorb blue light, making the shell appear red under certain conditions.
Royal red shrimp are tender, salty-sweet and one of the most unique harvestable species of shrimp in all of Florida. Almost lobster-like, they come from deep, cold water along the continental shelf at depths ranging as deep as 2,000 ft. They do not travel and you will rarely find them outside of the Southeast.
Royal reds are more lobstery, sweeter and more tender than other shrimp. In fact, the only shrimp that beats or matches them are spot prawns, which, to me, are the king of all shrimp. Both are deep water shrimp, incidentally. You don't want to mess with royal reds too much.
