Tonkotsu is a unique version of ramen because it's technically not a flavor but a type of broth. The word tonkotsu means 'pork bone' and it points to the broth that's made by boiling pork bones along with some herbs for a long time to get a creamy, milky white soup.

Maruchan's story first began in 1953 when a young and determined Japanese visionary named Kazuo Mori started a small, frozen fish distributorship in Tokyo. Through hard work, commitment and perseverance, Mr. Mori's modest company soon grew into a successful food company, known as Toyo Suisan.

The broth for tonkotsu ramen is based upon pork bones, and tonkotsu (豚骨/とんこつ) in Japanese means "pork bones". The soup broth is prepared by boiling pork bones in water for a significant amount of time, up to eighteen hours, and the broth is typically cloudy in appearance.

As you can see, Tonkotsu ramen (pork bone broth) is mainly seen in the southern area of Japan. It was first created by Tokio Miyamoto-san at his yatai (outdoor food stall) in Kurume, a city in Fukuoka prefecture, December 1937. He later went on to establish a brick and mortar shop called “Nankin Senryo”.

Maruchan (マルちゃん, Maru-chan) is a brand of instant ramen noodles, cup noodles, and Yakisoba produced by Toyo Suisan of Tokyo, Japan. The Maruchan brand is used for noodle products in Japan, and as the operating name for Toyo Suisan's division in the United States, Maruchan Inc.

Noodles: Ramen noodles contain wheat flour, salt, water and a special alkaline water called “kansui.” “Kansui” is what gives the noodles their unique flavor and springy texture.
