Chex is an American brand of breakfast cereal currently manufactured by General Mills. It was originally produced and owned by Ralston Purina of St. Louis, Missouri, using the name Chex starting in 1950. The Chex brand went with corporate spinoff Ralcorp in 1994.

With New Year's Eve celebrations around the corner, I'm turning to the party food of my childhood: Chex Mix. The recipe was created by the Ralston-Purina Company in the early 1950s to move boxes of its signature cereals Wheat Chex and Rice Chex. There was no corn variety at the time.

The kernel is made up of four major components – starch, fiber, protein and oil – that can be processed in different ways to be used in all kinds of products. In fact, a typical grocery store contains 4,000 items that list corn ingredients on the label.

Corn (90%), sugar, salt, barley malt extract, vitamins (vitamin E, niacin, vitamin B6, riboflavin, folate), minerals (iron, zinc oxide).

In total, General Mills produces 13 varieties of Chex Mixes, not including limited editions. These flavors can be broadly divided into three categories: salty, chocolate (usually marketed as "Muddy Buddies"), and sweet 'n salty. Sometimes, limited edition varieties of Chex Mix are released.

Chex Mix is such a perfect food because it is balanced. Each individual piece retains its own individual texture, shape and flavor, yet together the pieces compliment one another and are coated in the same spice blend. Not all pieces absorb the flavor in the same way - some, like the pretzels, are merely coated in it.

Chex mix is the ultimate DIY snack. It's crunchy, just the right amount of salty, and stays good for several weeks, making it the perfect thing to keep on the counter for midday nibbling. Plus, our version can be made with whatever cereal, toasted nuts, and crunchy snacks you've stocked up on.

Most of the crop is used domestically as the main energy ingredient in livestock feed and for fuel ethanol production. Corn is also processed into a multitude of food and industrial products including starch, sweeteners, corn oil, and beverage and industrial alcohols.
