HISTORY. Boston Market Corporation, originally known as Boston Chicken, was founded in 1985. The initial business concept was based on the premise that the public would buy hot, home style meals that could be purchased and carried out for dinner.
The process involves placing the food inside a laminated pouch and subjecting the packaged product to vacuum before sealing. The sealed pouch is then cooked in boiling water. After cooking, the pouches are quickly cooled in a stream of cold water prior to freezing.
From 1929, Clarence Birdseye introduced "flash freezing" to the American public. Birdseye first became interested in food freezing during fur-trapping expeditions to Labrador in 1912 and 1916, where he saw the natives use natural freezing to preserve foods.
The food undergoes a process of cryogenic freezing with liquid nitrogen. After the food is placed on the conveyor belt, it is sprayed with liquid nitrogen that boils on contact with the freezing food. This method of flash-freezing fresh foods is used to retain natural quality of the food.
