The diet of the Reconstruction South was bland and monotonous, especially by Louisiana standards. So Edmund McIlhenny decided to create a pepper sauce to give the food some flavor and excitement.

Buffalo Sauce is a spicy sauce, originating (surprisingly enough) in Buffalo, New York state. The year was 1964 and the owner of the Anchor Bar, Teressa Bellissimo, had a gaggle of hungry children around her and very limited ingredients. So she did what the best chefs do – she got creative.

Just kidding, of course, it isn't the pituitary gland at all, it's taken directly from the bison's nostril- Alright, for real this time: The sauce gets its name from buffalo sauce's origin: The Anchor Bar in, you guessed it, Buffalo, New York.

It's aged in barrels like bourbon. The original recipe calls for creating a mash of red tabasco peppers and salt; that mash is then aged in barrels for three years before being combined with distilled vinegar to become the highly concentrated sauce that goes into the bottle.

The traditional story goes that "Tabasco Sauce" was created by Edmund McIlhenny. McIlhenny was from Maryland originally, but he moved to New Orleans, Louisiana to seek his fortune in about 1840. He found his fortune by going into the banking business.
