Vanilla is a plant. The bean (fruit) is commonly used for flavoring, but it is also used to make medicine. Because vanilla extract can be expensive, lab-produced vanillin is usually used as a substitute for vanilla. Sometimes less expensive extracts, such as tonga bean extracts, are used to dilute vanilla extracts.

Natural is not a term that has a definition by the FDA. Typically, it refers to “Category 2” vanilla extract. This means that at least 51% of the flavoring comes from vanilla beans and the other 49% comes from natural or artificial flavorings, most commonly, vanillin and ethyl vanillin.

Natural vanilla flavoring is derived from vanilla beans with little to no alcohol. The maximum amount of alcohol that is usually present is only 2–3%. Therefore, by FDA regulations it cannot be called an extract.

Vanillin is the compound in vanilla beans that gives them their distinct flavor. However, less than 0.3% of vanillin used to flavor foods actually comes naturally from vanilla beans, primarily because extracting vanilla beans is a time-consuming, labor-intensive, and costly process.
